Quinoa-Feta Burgers
1 15 oz can kidney beans drained and rinses
1 shallot minced
1 carrot finely grated
2 cups of cooked quinoa
2 tbsp chopped freshly parsley
3 tbsp crumbled feta
1 tsp coarse salt
2 egg whites lightly whisked
2 tbsp extra virgin olive oil
1.in a bowl mash beans into a thick paste and mix in shallot, carrot, quinoa, parsley, feta salt, and egg.
2.form into six patties and chill for 30 minutes
3.heat 1tbsp oil on stove top and cook (or put directly on grill grates), cooking 4-5 minutes per side.
Okay, to be honest, these tasted good but they did NOT hold together well but it might have been my fault. One: I didn't want six patties because there's just me. So I halved the recipe (and used half the beans to make home made baked beans) and that included halfing the eggs which is the binder.) I'm not sure if that was the reason it didn't hold or 2) I used a whole egg and not whites (is lazy) but that shouldn't have mattered.
Frankly I have NO idea how thick they were making this because using half a recipe I got six full thick patties. THe full recipe would have given me a dozen and I wouldn't put them on the grill, that's just me. The way these held together would have been a disaster. They worked on the skillet just fine and I transferred it piece-meal onto the bun and they ate well
